Vegan Thanksgiving: Coconut Whipped Cream

Ingredients

2 cans of coconut milk high fat, in

the fridge at least overnight

⅓ cup sugar or maple syrup

Directions

In a mixer, scoop out cold coconut fat on the top (discard coconut water). Whip until peaks start to form. Slowly add in sugar and keep mixing. Once it resembles whipped cream pour over the top of Pumpkin Pudding Pie.
