Vegan Thanksgiving: Creamless Cream Corn

This is always everyone’s favorite at my table. No matter what I make, or how complicated it is, everyone always talks about the creamed corn.

Ingredients

2 x 16 oz bags frozen organic

corn ( i put it in the fridge

so it thaws overnight)

1 quart coconut milk creamer

4 tablespoons sugar or syrup

¾ teaspoon salt

½ teaspoon pepper

6 tablespoons organic cornstarch ⅓ cup water.

Directions

In a pot on medium heat, bring corn, creamer, sugar, salt, and pepper to a rolling boil

and while stirring constantly. Stir together cornstarch and water, then set aside. When corn is bubbly, add in cornstarch mixture,

and stir as it thickens. As it gets thicker take off the heat and let sit and then serve.

Prepare for compliments.
