Vegan Thanksgiving: Mashed Potatoes
Thanksgiving isn’t complete without mashed potatoes and no-one will know these aren’t the real deal.
Ingredients
8 Potatoes (about 5 pounds)
peeled and chopped
½ cup vegan butter (earth balance is my choice)
¾- 1 cup almond or coconut milk 1-½ teaspoons salt.
Directions
Boil potatoes until soft, about 20 minutes. Strain them and put them back in the pot. Add butter, milk and salt and mash until
you get all the lumps out.
THANKSGIVING TIP! Don’t have a masher? Use the bottom of a flat bottom glass or wine bottle.
Nut free with coconut milk. Soy free with vegan butter.
